Are you like me and even though Fall is officially here (and you love it!) you still also love dragging out the best parts of summer a littleeeee bit moreeee??!
I know in the Cole Casa we LOVE a good, hearty potato salad pretty much ANY time of year. This side dish always channels the best summer cookout vibes for me, so I periodically include it on our menu in ANY season.
Well this fall, here’s a brand NEW spin on good, ol’ ‘tater salad that I think you’ll LOVEEE!
It’s also gluten, dairy, and soy free, but customizable for sure! But the REAL bonuses are in the sneaky health benefits!
**To note: all amounts are approximately what I used and this total recipe fed my family of 6 as a side dish for a couple days! It’s SO good though, I’d be lying if I told you I didn’t make it my MAIN dish a few times myself. ;)
INGREDIENTS:
~3lb organic red potatoes
~4 organic celery stalks
~5 pastured hard boiled eggs
~1sm or half a large onion diced, OR 1-2Tbsp onion flakes
~1/2tsp garlic powder
~1/4tsp fresh ground black pepper
~1/2tsp Redmond sea salt
~1/4c Primal Kitchen BBQ Ranch
~1c Sir Kensington’s Mayo OR Primal Kitchen Mayo
Optional flavoring:
~1 drop each black pepper, parsley, dill, and celery seed Vitality essential oils from Young Living (can grab them HERE)
DIRECITONS:
Cut potatoes into bite-sized chunks and boil until fork-tender
Drain and cool in ice bath
Chop celery and eggs into bite-sized pieces and add to potatoes
In large measuring cup or medium mixing bowl, mix together remaining ingredients, adding in any Vitality oils you are using at this time as well (*hint* guys, this is a MAJOR flavor booster AND full of therapeutic benefits for your body!)
Pour over potato mixture and gently stir to combine
Garnish with fresh herbs if desired, and voila! Ready to indulge and bask in the goodness of summer no matter what time of year it may be!
NOTES:
~I recommend looking for garden-fresh or organic options for all ingredients here if possible, especially meat and any produce on Dirty Dozen list (found HERE). Minimizing chemical exposure is a key for healing.
~Ingesting essential oils may not be for everyone, but our household loves this option. We are VERY specific about using oils in this way, and I cannot endorse ingesting oils whose origin and growing practices are unknown.
